Baked Pineapple Casserole

20 ounce can crushed pineapple

1 1/2 C sugar

4 eggs, beaten

5 T cornstarch

1 tsp cinnamon

small pats of butter

Combine ingredients and put in a buttered baking dish.  Bake at 350 degrees for 1 hour.  This recipe is SO versatile!!!  It can be doubled, tripled and even quadrupled.  You can substitute Egg Beaters for the eggs, and Splenda for the sugar.  It can be mixed ahead of time, refrigerated and then baked, or baked, stored and then reheated.  It can be served hot, warm, room temperature or cold.  It can accompany a meal or be a dessert.
