Chocolate cake with peanut butter icing

This is from the Central Market Cookbook, page 154.  It is to die for…beware!  Makes 12 – 16 servings

Cake ingredients:

1 tsp baking powder

2 tsp baking soda

2 c. all purpose flour

pinch salt (optional)

2 c. granulated sugar

3/4 c. (Wilbur’s) cocoa

2 eggs

1/2 c. vegetable oil

1 c. strong, hot, gourmet coffee

1 c. milk

2 tsp. vanilla

Icing Ingredients:

2 c. peanut butter

3/4 c. (+++) confectioner’s sugar

1 tsp. butter

1 tablespoon milk

1. In a small bowl combine baking powder, baking soda, flour and salt.

2. In a larger mixing bowl combine dry ingredients plus sugar and cocoa.  Beat in eggs.  Add oil, coffee, milk and vanilla.  Batter will be thin and runny!  Pour into a “floured” 9″ x 13″ cake pan.

3. Bake at 350 degrees for 30 – 35 minutes.

4. Mix icing to spreading consistency.  Spread on cooled cake.

5. ENJOY!!!

*I use cocoa to “flour” my pan for baking.  ; )
