Oven Baked Brown Rice

1 1/2 cups brown rice

2 1/3 to 2 1/2 cups water…vegetable cooking liquid, broth, wine, etc…  ; )

2 tsp. butter, margarine, olive oil

1/2 tsp sea salt

Spray baking pan with non-stick cooking spray.  Place rice in pan.  Boil liquid and pour over rice.  Sprinkle with salt and dot with butter (I also add assorted other ingredients at this point- sliced mushrooms, carrots, squash, chopped broccli, onions, tomatoes, any kinds of herbs or seasonings…be creative!).  Cover tightly with lid or aluminum foil.  Bake at 375 degrees for an hour.  Remove from oven, uncover, fluff with a fork, cover with a kitchen towel and allow to stand 5 minutes.  Uncover, fluff again, cover and allow to rest 5 more minutes.  Serve and enjoy!  This recipe can EASILY be doubled.  The rice also freezes well for future use in soups, as a side, etc.  It’s easy, healthy and delicious!
