Crock Pot Steel Cut Oatmeal
2 cups steel cut oats
1/4 – 1/2 cup pearled barley (not the quick cook kind)
1/4 – 1/2 cup turbinado (raw) sugar or brown sugar
one 3 inch cinnamon stick, whole
1/2 tsp. nutmeg
1/4 tsp. mace
1 tsp. sea salt
8 cups water
Dump everything into a large crockpot, & cook on low overnight (8 – 10) hours. It will smell GOOD when you get up! : ) It looks gloopy when you lift the lid of the crockpot though. Stir it well and serve. It may stick to the crockpot a little, just scrape the sides & bottom of the crockpot if needed. I tried using cooking spray on the inside of the crockpot and it didn’t make much of a difference.
The first time I made this I added dried fruit to the mix overnight. It works better and tastes better if the dried fruit is added when you serve the oatmeal. Smash a half a banana in the bowl, top with oatmeal, a bit of milk, a few candied pecans & a dusting of turbinado sugar. YUM!!! Add any fruit in season!!!
